Good Gut Grain Bowl

This bowl is delicious, filling and super nourishing for our microbiome (and our whole body!) It is nutrient packed, quick and easy to make.  :)

Ingredients (serves 3):

  • 1 cup wild rice, dry

  • 1 ¾ cups low sodium vegetable broth (or water)

  • 2 teaspoons sesame oil

  • 1 tablespoon tamari 

  • 2 tablespoons olive oil

  • 2 scallions, chopped
  • 1 clove garlic, chopped

  • 1 cup mushrooms

  • 2 cups broccoli, chopped and destemmed

  • 1 cup spinach

  • 1 cup kimchi 

  • 2 tablespoons sesame seeds

Directions:

  1. Place a saucepan over medium heat and add the vegetable broth or water and rice. Bring to a boil and then reduce the heat to a simmer and cover the rice hallway with a lid until the liquid is absorbed, about 30 minutes. When the rice is almost cooked, fluff with a spoon and add the tamari, sesame oil, mushrooms, spinach and scallions. Let the mushrooms soften and spinach soften before removing it from heat. 

  2. While the rice is cooking, preheat the oven to 425 degrees. Cover a baking sheet with parchment paper. In a bowl, mix together the broccoli, olive oil, garlic and drizzle with tamari. Spread on baking sheet and roast for 15 minutes until the broccoli is crispy. 

  3. Divide rice mixture into 3 bowls and add even amounts of broccoli and kimchi to each bowl. Sprinkle wit sesame seeds and option to drizzle with sriracha or hot sauce of choice.
